Honey whole wheat oatmeal cookies

I have been looking for an oatmeal cookie recipe that is naturally sweetened with honey. I came across this recipe from Whole Grain Gourmet, I made some modifications to it to fit what I had around the house.

Ingredients:

1 c. Whole wheat flour (I used white whole wheat)

1-1/2 c. Oats

1/2 tsp. Baking soda

1/2 tsp. Baking powder

1/2 tsp.  Sea salt

1 Tbsp. Cinnamon or pumpkin pie spice

1/2 c. Honey

1/2 c. Oil *

1 Tbsp. Molasses

1 Egg **

1 tsp. Vanilla

Optional: Walnuts, raisins, dried berries, chocolate chips (you can buy a grain sweetened variety)

 Preheat oven to 335 degrees. Combine dry ingredients and wet ingredients in a separate bowl and then combine. Add in your nuts, fruit, chocolate, etc. Drop spoonfuls onto a greased cookie sheet or lined with parchment and bake 12-15 minutes or until golden colored. Enjoy!

* I used applesauce for the whole 1/2 c. of oil, but you can used half oil/half applesauce.

**I used half a banana instead of an egg and it turned out great!

  1. I have all the ingredients for once, just waiting to be made into these! I’m going to use the applesauce and banana, too. Love those substitutes. My favorite part about oatmeal cookies are the raisins, walnuts and cinnamon spices. I’ve never used molasses in a oatmeal cookie recipe before, so I’ll have fun taste-testing! Thanks for experimenting!

  7. I finally made these puppies and they are delicious! I provided your original link, although the recipe I used on my post was what I ended up doing…lots of different substitutions. But it was still an incredibly easy, yummy cookie. Thanks so much!
