One of the things I have missed most about cutting out refined sugar/white flour is making holiday sugar cookies and decorating. This has been a family tradition of mine since I can remember and I have probably 100 cookie cutters that have been collected over the years, and I didn’t want them to go to waste. I recently came across a great blog, http://myyearwithout.blogspot.com/, about living without sugar. She has great recipes and help for those trying to get off the stuff. She had a no-sugar sugar cookie that she had found off another great site, http://thenourishingapron.blogspot.com/, who also cooks without refined sugar. This recipe is on both their sites, so I decided to try it for some fun Valentine’s day cookies. I used whole wheat flour instead of white, which made the cookie have almost a tea biscuit taste (which I like! I drink a lot of tea) and you can also try wheat pastry flour too if you want to keep it white flour free.
I made two batches of the original recipe, which can be found here, one with almond extract and one with vanilla. I substituted the white flour for equal parts whole wheat flour. Yum, sugar cookies again-thanks guys!
I decided to make a cream cheese spread to put on top of them, this may look and act like a frosting - but it is really more of a sweet spread. It reminds me somewhat of sweet cream butter, with a cream cheese taste. It works well for decorating and freezes nicely. Although it is no sugar (Yay!) it still has some fat – so it is somewhat of a special occasion spread.
Cream Cheese Spread
1 c. cream cheese
3 tsp. butter (optional but it gives great depth and allows the spread to set up like frosting)
1/4 c. honey
1/4 c. agave
1/2 tsp. vanilla (optional)
Mix all ingredients together, I use a food processor, and the spread may be a little thin, just put in the fridge for a few minutes to set up.
Make small cookies with spread and raspberries, and you have a great treat for V-day parties.
