Pure Pineapple or Pineapple Basil

minimalism at its sweetest

There is not much better in this world than a pure fresh pineapple. On a recent trip to the grocery store they had pineapples on sale for a dollar. Normally I don’t buy pineapples, they are either too expensive or I am a little intimidated by them fresh. But I took my chances, and I am very glad that I did. My pineapple was still mainly green with a small amount of golden at the bottom. Since there is nothing worse than making the effort to peel and prepared a fruit and then it not being sweet, I had to wait. This gave me something to look forward to over the next few days.

As I mentioned before, there is not much better (or sweeter) than a fresh, ripe pineapple, I decided to make a purely pineapple smoothie. This has minimal work, ingredients, and time with a lot of reward. I recently bought a basil plant to have around the house and rubbed a few between my hands and stirred them into the finished smoothie. The flavor combination was amazing! I was very pleasantly surprised and this will definitely be something I will serve at parties or to guest. It’s easy, pretty, and tastes incredible.

Perfect Pineapple Smoothie

Recipe:

1 whole ripe pineapple, cleaned and chopped [including core]

2 c. ice cubes

2-3 T. raw organic honey

2-3 basil leaves [optional]

Combine all ingredients in a vitamix [or other high speed blender] until smooth and frothy. Best if served immediately.
